The short answer:
Most gochujang varieties taste more alike than different.
Rice, glutinous rice, barley, Cheongyang chili, Taeyangcho and tomato can change the sweetness, heat, texture or grain flavor, but the basic taste of gochujang remains familiar: savory, slightly sweet, spicy and fermented.
Think of it like mustard in Western cooking. Dijon, whole-grain and spicy mustard each have their own character, but they are still recognizably mustard. Gochujang is similar. You usually do not need a different gochujang for every Korean dish.

Rice, Barley, Cheongyang, Taeyangcho & Tomato Gochujang
Walk down the condiment aisle of a Korean supermarket, and you may notice that there is no single type of gochujang. Some are made with glutinous rice or barley, some emphasize hotter peppers, and others use ingredients such as tomato to create a more modern style.
Glutinous rice, rice and barley mainly describe the grain base.
Cheongyang usually refers to a hotter chili profile.
Taeyangcho refers to sun-dried red peppers.
Tomato gochujang is a modern specialty variation.
1. Glutinous Rice Gochujang
The product shown here is a low-sodium glutinous rice gochujang, one modern variation of this traditional style.
Glutinous rice gochujang is one of the most familiar styles found in Korea. Glutinous rice contributes sweetness and body, giving the paste a smooth, rounded texture.
2. Rice Gochujang
Rice gochujang may use regular rice rather than glutinous rice. Depending on the recipe, it can taste a little cleaner and feel slightly less sticky than a glutinous-rice version.
3. Barley Gochujang
Barley gochujang uses barley as part of its grain base. It often has a more rustic, grain-forward character than rice-based gochujang.
4. Cheongyang Gochujang
Cheongyang gochujang is a hotter style of gochujang, made to highlight the heat of Cheongyang chili peppers. The name usually signals the use or character of Korea's hot Cheongyang chili pepper.
If you are sensitive to heat, check the spice-level indicator on the package before buying.
5. Taeyangcho Gochujang
“Taeyangcho” literally refers to red chili peppers that have been dried in the sun. It describes the pepper-processing method, not a completely separate style of fermented paste.
6. Tomato-Fermented Gochujang
Tomato-fermented gochujang is a modern specialty variation. Tomato can bring extra fruitiness, gentle acidity and natural sweetness to the paste.
Which Gochujang Should I Choose?
Glutinous rice gochujang
Cheongyang gochujang
Barley gochujang
Tomato-fermented gochujang
These names can overlap. A single tub of gochujang might be both glutinous-rice gochujang and Taeyangcho gochujang at the same time.
There isn't just one gochujang.
The grain, pepper and fermentation style can subtly change the flavor in every tub.
