Kkori Gomtang in Pachinko: Why Korea and France Both Cook Oxtail Slowly | 《
Kkori Gomtang in Pachinko: Korean Oxtail Soup and the French Art of Cooking Oxtail
A pot of Korean oxtail soup appears in Pachinko. But the story of oxtail reaches far beyond Korea.
In the Episode 1 screenplay of Pachinko, Solomon lifts the lid of a large stockpot in Sunja’s kitchen. Inside is kkori gomtang (꼬리곰탕)— Korean oxtail soup.

Yet oxtail has another remarkable culinary history. More than a century ago, Auguste Escoffier documented French preparations in which beef tail was slowly cooked using classical techniques.
Kkori gomtang is Korean oxtail soup. “Kkori” (꼬리) means tail. Cross-cut sections of beef tail are slowly cooked until the meat becomes tender and the broth develops body from the meat, bones and connective tissues.
The Korean soups of Pachinko
There is an important distinction here. The original novel and the television adaptation do not feature exactly the same soup.
In Min Jin Lee’s original novel, Kyunghee and Sunja visit a butcher in Osaka. Kyunghee asks for shinbones and some meat to make soup. After looking at the money in her purse, however, she realizes that she cannot comfortably afford both and chooses the bones.
When the butcher asks what kind of broth she is making, Kyunghee answers: seolleongtang (설렁탕).
The television adaptation gives us another soup. In the Episode 1 screenplay, decades later in Osaka, an older Sunja is cooking for Solomon. When he lifts the lid of her stockpot, kkori gomtang—oxtail soup—is simmering inside.

What does oxtail actually look like?
Before it reaches the soup pot, oxtail makes the structure of the ingredient easy to understand. Each cross-cut section contains bone surrounded by meat, fat and connective tissue.
That visual directness can seem unfamiliar to someone who rarely eats bone-in cuts. But visible anatomy is not a measure of culinary refinement.
From Korean kkori gomtang to French queue de bœuf
Korea is far from the only food culture to recognize the culinary potential of beef tail. In French, oxtail is queue de bœuf.
Auguste Escoffier’s Le Guide Culinaire, first published in 1903, records classical preparations for beef tail, including long, moist cooking techniques.

| Ingredient | Cross-cut beef tail | Queue de bœuf |

| Shared logic | A bone-in, connective-tissue-rich cut rewards moist heat and time. | |
Why does oxtail need time?
Part of the answer lies in connective tissue. Collagen is an important structural protein in animal connective tissue and contributes to the toughness of many cuts of meat.
During prolonged moist heating, collagen can gradually convert toward gelatin, changing both the texture of the meat and the body of the cooking liquid.
The bone is not something the dish tries to hide
In kkori gomtang, the anatomy of the ingredient remains visible. You can see the bone and pull tender meat away from it as you eat.
That visual directness should not be confused with culinary simplicity.
Sometimes it explains the entire dish.
Why does a pot of soup matter?
Seen this way, the soup in Pachinko becomes more interesting than a piece of Korean food decoration.
The novel gives us Kyunghee counting her money and choosing bones for seolleongtang. The television screenplay gives us Sunja, decades later, with kkori gomtang simmering for Solomon.
The dishes are different. The generations are different. The circumstances are different.
The pot remains.
In Korea, beef tail becomes kkori gomtang. In classical French cuisine, queue de bœuf was approached through braising, simmering and other slow-cooking techniques. The dishes are different, but both reveal the same culinary idea: time can transform a difficult cut into something deeply valued.
FAQ
