Korean ramen is much more diverse than many people expect.

It can be a hot and spicy soup, a rich jjajang noodle dish, a cold bibim ramen, a fiery Buldak stir-fried ramen, or a quick cup ramen enjoyed almost anywhere.

Some are a full meal on their own, while others like ramen sari are made to be added to rabokki, budae jjigae and Korean hot pots.

A SIMPLE FLAVOR MAP

Korean Ramen by Flavor

Korean ramen becomes easier to understand when it is grouped by flavor and cooking style rather than by brand name alone.

STYLE FLAVOR & MOOD
Mild Gentle broth and soft seasoning. Easy for beginners.
Savory Seafood, kimchi and black-bean flavors feel deeper and richer.
Spicy Hot broth with bold chili and savory depth.
Very Spicy Concentrated sauce, little broth and strong lingering heat.

01 · CLASSIC SOUP STYLE

Spicy Korean Ramen

A bowl of spicy Korean ramen topped with egg and green onions, served with white rice and yellow pickled radish

Spicy soup ramen is the style many people first imagine when they hear “Korean ramen.”

The broth is hot, savory and spicy, while the noodles stay springy and chewy. Egg, green onion, bean sprouts and kimchi are common additions.

02 · GENTLE & COMFORTING

Mild Ramen

Not every Korean ramen is extremely spicy. Mild ramen has a softer broth and a gentler seasoning profile.

It is a comfortable choice for people who are new to Korean food or who prefer less heat.

03 · SEAFOOD & KIMCHI

Seafood and Kimchi Ramen

Seafood ramen often has a deeper ocean-inspired broth, while kimchi ramen carries a savory and lightly tangy character.

04 · COLD & BROTHLESS

Bibim Ramen

A bowl of Korean bibim ramen topped with cucumber, half a boiled egg, shredded seaweed and sesame seeds

Bibim ramen is served without soup. The noodles are boiled, rinsed in cold water and mixed with a spicy-sweet sauce.

Cucumber, boiled egg and sesame seeds are classic toppings, especially in warm weather.

05 · QUICK & CONVENIENT

Cup Ramen

Cup ramen is one of the easiest ways to enjoy Korean instant noodles. It only needs hot water and a few minutes.

It is closely tied to Korean convenience-store culture and late-night snack culture.

06 · RICH BLACK BEAN SAUCE

Jjajang Ramen

A bowl of Korean jjajang ramen topped with cucumber, shredded seaweed and sesame seeds, served with yellow pickled radish

Jjajang ramen is a brothless ramen mixed with a dark black bean-style sauce. It tastes rich, savory and slightly sweet.

Cooking Jjapaghetti

Boil the noodles until chewy, then drain most of the water. Add the black bean sauce powder and seasoning oil, and mix until every noodle is evenly coated.

Serve with a boiled egg for a simple and satisfying Korean jjajang ramen meal.

07 · STIR-FRIED & INTENSE

Stir-Fried Ramen and Buldak

A bowl of spicy Korean Buldak stir-fried ramen topped with melted cheese and shredded seaweed

Stir-fried ramen is made with little or no broth. The cooked noodles are coated in a thick, concentrated sauce.

Buldak Bokkeum Myeon is most famous example and is known around the world for its very spicy sauce.

Cooking Buldak Bokkeum Myeon

Boil the noodles until chewy, then drain most of the water, leaving a small amount in the pot. Add the spicy liquid sauce and stir-fry the noodles over low heat until the sauce becomes thick and evenly coats every strand.
Finish with the flakes and serve with a fried egg if you like.

08 · COOKING INGREDIENT

Ramen Sari

A stack of plain instant ramen noodle blocks on a white plate

Ramen sari is a plain instant noodle block used for cooking. It is usually added to rabokki, budae jjigae, hot pots and other saucy dishes.

If you use regular instant ramen for rabokki, it is better to use only the noodle block and not the soup powder.

Budae jjigae is a hearty Korean stew filled with ham, sausages, baked beans, vegetables, and a spicy red broth. Let it simmer until the ingredients release their flavors into the broth.

Ramen sari is one of the most popular additions to Budae Jjigae. Add the plain noodle block after the broth and other ingredients have begun to boil.

Gently press the noodles into the spicy broth and cook until tender but still pleasantly chewy. As the flavors of the ham, sausages, and baked beans blend together, the broth becomes richer and more savory.

The noodles will continue to absorb the broth as they sit, so serve the stew as soon as they are perfectly cooked.

In Korea, instant ramen is not only something cooked at home. It is also part of convenience-store culture, bunsik shops and self-service ramen cafés.

Some convenience stores provide hot water or ramen-cooking machines. At self-service ramen shops, people often choose a pack and add toppings like egg, cheese, rice cake or green onion.

At a bunsik shop, ramyeon may be served in a pot with egg and vegetables, giving it a very simple but distinctly Korean comfort-food feel.
