Pork back ribs, kimchi, gochugaru, doenjang, and Korean soup soy sauce are usually available at Korean grocery stores and larger Asian supermarkets. For the ribs, try searching for pork back ribs or baby back ribs.
등갈비는 pork back ribs 또는 baby back ribs라는 이름으로 찾아보면 편해요.
Ugeoji may be harder to find. Think of it as softened outer napa cabbage leaves. If you cannot find Korean ugeoji, there are several easy substitutes below.

How to Cook
Blanch the pork ribs
Bring a pot of water to a boil and blanch the ribs for about 5 to 7 minutes. Add a bay leaf if you have one. Rinse the ribs briefly afterward to remove foam and loose bits around the bones.
Layer the kimchi and ugeoji
Put the kimchi and ugeoji on the bottom of the pot, then place the blanched ribs on top. The vegetables stay close to the broth and slowly absorb the flavor from the pork.
Add the seasoning and 350 ml of water
Spoon the seasoning over the ribs and add 350 ml of water. Cover the pot and bring it to a boil over high heat. Once the broth is bubbling steadily, reduce the heat.
Simmer gently
Keep the lid on and simmer over medium-low heat for 20 to 25 minutes. Spoon some of the broth over the ribs once or twice while they cook.
Add 400–500 ml of hot water
When the broth has reduced quite a bit but the ribs still need more time to soften, add 400 to 500 ml of hot water. I used the full 500 ml in this batch.
Bring it back to a steady simmer and cook covered over medium heat for another 10 minutes.
Finish uncovered
Remove the lid and lower the heat to medium-low. Cook for another 10 to 15 minutes, until the broth is reduced but not completely dry. The finished sauce should sit shallowly around the ribs rather than looking like a full pot of soup.
350 ml first + 400–500 ml later
The water goes in in two stages, not all at once.
At the end, taste the broth. If it needs just a little more seasoning, I prefer adding a small pinch of salt rather than more soy sauce.
Why This Recipe Works
My broth reduced faster than I expected during the first simmer. Instead of continuing to cook until the bottom became dry, I added 500 ml of hot water and gave the ribs more time to soften.
That is why I now prefer adding the water in two stages. The first 350 ml keeps the seasoning from becoming too diluted, while the later water gives the meat enough time to tenderize.
The last uncovered simmer is just as important. It reduces the broth again and brings the dish back from a stew-like consistency to the richer, shallow broth you expect from kimchi jjim.
What Can I Use Instead of Ugeoji?
If ugeoji is not available, outer napa cabbage leaves are the easiest substitute. Collard greens also work very well because they stay intact during a long braise.

Tips
Do not blanch the pork ribs for too long.
Blanching is only meant to remove foam, impurities, and some of the strong pork smell. About 5 to 7 minutes in boiling water is usually enough. If the ribs are blanched for too long, the meat can tighten and lose moisture, which may make it feel drier after the long simmer.
Use well-fermented kimchi if possible. It becomes soft and mellow during the long simmer and works especially well with fatty pork ribs.
Watch the amount of broth rather than relying only on the clock. A wide pot or a stronger burner can reduce the liquid much faster.
If you use savoy cabbage, kale, or Swiss chard instead of ugeoji, add them later because they soften faster than traditional ugeoji or collard greens.
Storage and Reheating
Cool leftovers promptly and keep them refrigerated. When reheating, use a small pot over gentle heat until the ribs and broth are thoroughly hot.
If the broth becomes very thick after chilling, add a small splash of water before reheating.
FAQ
Frequently Asked Questions ·
Can I add all the water at once?
You can, but I prefer dividing it. Start with 350 ml, then add 400 to 500 ml later if the ribs need more time to soften.
Do I have to use ugeoji?
No. Napa cabbage outer leaves or collard greens are the easiest substitutes.
Why blanch the pork ribs first?
A short blanch makes it easier to rinse away foam and residue around the bones before braising.
How do I know when the kimchi jjim is done?
The ribs should feel tender, and the broth should be reduced to a shallow, rich sauce rather than looking like a full pot of soup.
Final Note
What I like most about this method is that the ribs have enough time to become tender without turning the dish into a watery stew. Start with less water, add more when the ribs need it, and finish by reducing the broth.

A good kimchi jjim is not about adding more. It is about knowing when to slow down, when to add a little water, and when to stop.
When the ribs are tender and the broth has reduced just enough, all you really need is a bowl of hot steamed rice.
Slow-cooked, deeply flavored, and best with hot rice.
